Chickpea Salad Sandwich Without Mayo

Get out of your lunchtime rut and make packing lunches more exciting with this Chickpea Salad Sandwich.

half of a chickpea salad sandwich on a cutting board

Ever get in a lunch rut? Need new ideas for packing your kids’ or your own lunch? Are packable noontime options dwindling? Surely you’ve met the ‘What shall I pack for lunch?” question.

I always pack my lunch for the next day the night before. If not, I’m typically running out the door and a Siggi’s yogurt, KIND bar, and a piece of fruit are just tossed in my bag on my way out. I don’t mind those “snacky” kind of lunches once in a while, but I’d prefer more of a meal kind of lunch.

Plant-Based Proteins:

This chickpea walnut sandwich is a plant-based tuna/chicken salad makeover. I always try and make sure protein is present at lunchtime to help keep me full through the afternoon. Chickpeas are the perfect pulse for this recipe because the firm texture holds its shape. The addition of the walnuts is key for the crunch factor, while also providing heart-healthy fats.

Are garbanzo beans the same as chickpeas?

Yes. Originally the name garbanzo bean came from the Spanish community and over time different cultures have referred to them as another name. Eventually, these beans came to be known as chickpeas to most people in the world today.

Are chickpeas lectins?

Yes, chickpeas are considered a legume, and all legumes contain lectin. Lectin, a protein, binds to carbs and is known to some as an anti-nutrient. This is somewhat a controversial concept, because people with stomach sensitives may see an effect, but most do not. Also, most foods containing lectin are high in antioxidants, so the good outweighs the bad. If you are concerned about lectins, know that once they are cooked, the lectin is deactivated.

Ingredients for Chickpea Salad Sandwiches

  • chickpeas
  • walnuts
  • plain Greek yogurt – Greek yogurt is a great substitute for mayonnaise to trim back on saturated fat and replace it with a boost of protein and calcium instead.
  •  Dijon mustard
  •  honey
  • scallions
  • salt and pepper to taste
  • whole wheat bread, toasted
  • (Optional) Toppings: lettuce, tomato, onion

How to Make a Chickpea Salad Sandwich Without Mayo

Mash the chickpeas in a small bowl using a fork. Don’t over-mash, we aren’t making hummus!

Mix in the nuts, mustard, greek yogurt, honey, and scallions. Season with salt and pepper to taste.

Spread the chickpea salad on your bread to make the perfect sandwich. You can also add it on top of a salad, or dip with crackers – this chickpea walnut mixture is versatile to get you out of your lunchtime rut.

Should you rinse canned garbanzo beans?

You should and mainly it’s because the liquid contains a lot of unnecessary sodium which is why. most recommend draining and rinsing chickpeas before using.

Grocery Store Finds: September 2018

There are so many new products hitting the shelves soon. This dietitian has the inside scoop.

Grocery Store Finds with Chef Julie Harrington, RD @ChefJulie_RD #dietitian #healthy #grocerystore #groceryshopping #nutrition

This is the first-ever Grocery Store Finds post, where I haven’t actually tried the products yet myself. Last month was Expo East and was hoping to get there, but my schedule was already booked with cooking classes and other events. I vicariously was following the #expoeast on Instagram and seeing all these new products that were announced and soon to hit the shelves if they haven’t already.

Maybe it’s the dietitian in me, but when I see a new product, I am intrigued. Some of these brands you probably have heard of before, but they are expanding their product lines with new items.

Wild Friends Nut Butter with Collagen

—————-

Wild Friends with Collagen Peptides

(@wild_friends)

Wild Friends partnered with Vital Proteins, makers of high-quality, grass-fed collagen products, to make these nutrient-dense nut butter. Why did they choose collagen? Collagen is a vital building block of our hair, skin, nails, bones, and joints. Our bodies naturally produce collagen, but as we age, the production decreases. Incorporating collagen into your diet can encourage natural collagen production and has been shown to promote healthy cartilage, joint and bone health, skin tone and elasticity, increased athletic performance, gut health, and deeper sleep. One serving of Wild Friends Collagen Nut Butter packs in 8 grams of protein per serving. The second I see this in my grocery store, it will for sure end up in my cart.

Chosen Foods Vegan Mayo

—————-

Chosen Foods Vegan Mayo

Vegan mayo? How is that even possible. Right on the jar, it says that it is made with avocado oil, but that is liquid. I did a little research and found out how they make a spreadable consistency. The magic is aquafaba! Aquafaba is the liquid leftover from soaking or cooking garbanzo beans. The water absorbs proteins and starches from the beans, becoming more viscous along the way. Its viscosity is similar to that of eggs and egg whites, making aquafaba the perfect egg substitute. Chosen Foods blends aquafaba with avocado oil, to create a 100% vegan mayo that can truly be described as plant-based. Use this mayo as you normally would – on sandwiches, wraps, or as a base for sauces and dressings.

Health Warrior Protein Muffin

—————

Health Warrior Protein Muffin

(@healthwarrior)

A protein muffin made in 60 seconds – I’m intrigued! I was very excited to see sorghum listed at the first ingredient. Sorghum is, a cereal grain native to Asia and Africa, that is naturally gluten-free, packed with protein and fiber, and full of antioxidants like policosanols. They use pumpkin seed protein to add extra protein for a quick and filling breakfast or snack.

Cece’s Veggie Noodle Co.

—————-

Cece's Veggie Noodle Co

(@cecesveggieco)

Cece’s Veggie Noodle Co. has expanded its line beyond veggie noodles. They now have rice varieties and veggie-packed meals. What I like about these are that they are fresh and super convenient. I don’t know about you, but have you ever tried spiralizing a beet? It looks like a murder scene on my cutting board. Take a short cut and utilize these conveniently prepped veggies.

Soozy’s Muffins

—————-

Soozy's Muffins

(@soozysmuffins)

Find Soozy’s Muffins in the frozen aisle. Soozy’s Muffins are made with all-natural, unprocessed ingredients, and are free from gluten, grains, soy, dairy, GMOs, fillers, stabilizers, and additives. Enjoy these muffins for breakfast, for dessert or as a snack. It’s convenient, easy, tasty, and goes well with your morning coffee, afternoon tea or a tall glass of milk at any time of the day.

Greek Pasta Salad

Did you know April 23rd is picnic day? What are your favorite picnic recipes? Add this Greek Pasta Salad to your next picnic spread.
Greek pasta salad - Banza (chickpea) pasta salad with cherry tomatoes, cucumbers, olives, chickpeas, feta cheese, in a white dish
I had many summer jobs during high school and in between college semesters. One of them was at an outdoor catering business. We did a lot of BBQ’s and graduation parties, which served the classic outdoor fair, including burgers, hot dogs, barbeque chicken, and ribs. Plus, the typical sides like, potato salad, pasta, salad, and coleslaw.

Making the sides was one of the tasks I simply dreaded. With catering, every recipe is made in mass quantities to serve a crowd.
Do you have a certain food or ingredient that just skeeves you out? For me it’s mayonnaise. For a large party, I would have to make potato salad in these large buckets and wear these giant gloves to toss the mayonnaise in.
Greek pasta salad - Banza (chickpea) pasta salad with cherry tomatoes, cucumbers, olives, chickpeas, feta cheese, in a white dish
I used Banza pasta for this recipe. I feel like there are never enough plant-based protein options available at barbeques. This is a great way to have a protein-packed option for those who don’t eat meat and want to enjoy this as more of a meal than a side dish.

There are so many new items I wanted to show you this month. I’m saving the overflow to share with you next month. I’ve been loving your emails and comments/messages on Instagram with your feedback when you’ve tried the grocery stores finds and letting me know new items to keep my eyes out for. Keep them coming!

KIND Protein Bars

Grocery Store Finds from a Registered Dietitians via RDelicious Kitchen @RD_Kitchen #rdchat #rdapproved #wellness #supermarket #grocery #healthy #dietitian KIND Protein Bar #protein
There are so many bars lined up on the grocery store shelves. It can get confusing. I like to highlight bars on my grocery store finds posts because many clients do ask me which ones I recommend. Before I recommend any bars, I always recommend real food first. I love this new line of KIND bars. The first ingredient always comes from a nutritionally-dense whole food – almonds or peanuts. I was so excited when KIND sent over these samples to try! Each bar contains 12 grams of protein each.

GT Kombucha: Pure Love Winter Edition

Grocery Store Finds from a Registered Dietitians via RDelicious Kitchen @RD_Kitchen #rdchat #rdapproved #wellness #supermarket #grocery #healthy #dietitian #kombucha #probiotics #fermented
GT came out with a new flavor this winter – Pure Love. It contains blood orange, hibiscus, and rose. It has a definite floral taste. I was a little taken aback at first, but then the flavor grew on me. I love adding a new flavor to my kombucha rotation.

Sambazon Acai Berry & Guarana Packs

Grocery Store Finds from a Registered Dietitians via RDelicious Kitchen @RD_Kitchen #rdchat #rdapproved #wellness #supermarket #grocery #healthy #dietitian #Acai #superfood
For quite a while acai was known as THE superfood. While all fruits and vegetables contain phytonutrients that have superfood elements, acai was touted for its high amounts of antioxidants that can help build up your immune system and protect your cells against damage from free radicals. Fresh acai berries are not regularly available in grocery stores. I found these frozen packs and have been adding them to my smoothies. It turns a deep dark purple shade.

Pique Tea

I’ve recently learned about Pique Tea. Pique Tea is cold brew instant tea crystals that dissolve in both cold and hot water while delivering 20x the antioxidants than regular tea bags or bottled tea. The tea crystals are organic with no added sugar or additives. Pique Tea is sharing the love with RDelicious Kitchen readers. The Good Bean: Crispy Favas + Peas

Grocery Store Finds from a Registered Dietitians via RDelicious Kitchen @RD_Kitchen #rdchat #rdapproved #wellness #supermarket #grocery #healthy #dietitian #snacks #protein #plantbased
The Good Bean just came out with a new line with fava beans and peas. The original line with chickpeas is still growing with new flavors. I was excited when they reached out to me to see if I wanted to try their new line – of course, my answer was yes! One serving contains 7 grams of plant proteins and 3 grams of fiber. To make their crispy favas and green peas, they soak them raw, then quickly crisp them with a spritz of coconut oil to retain the crunch. They are vegan-friendly, gluten-free, non-GMO, high protein, high fiber, and low fat. I’m slightly obsessed with the balsamic herb flavor. I’ve been adding them on top of my salads for a crunch.

Mocha Overnight Oats

Prep breakfast the night before, so you can freely hit the snooze button the next morning. This Mocha Overnight Oats recipe will not only fill you up but also give you a little extra energy for the morning.
Mocha Chip Overnight Oats via RDelicious Kitchen @RD_Kitchen #overnightoats #coffee #mocha #protein #breakfast
I used to be the person who never hit the snooze button. I would jump out of bed the second my alarm went off. I’ve gotten into the bad habit of staying up too late doing work. Sometimes I just get on a roll and keep working until my eyes can barely stay open. I know this is such a bad habit. I’m working on it..

This month’s Recipe Redux theme is “Grab a Book and Cook” which is a fun way to remake a recipe from your favorite cookbook. I grabbed my newest book from my collection for this month’s theme.
I love overnight oats. This new mocha overnight oats variation has become my new favorite! It is adapted from Lauren Harris-Pincus’ “The Protein-Packed Breakfast Club” cookbook.

About The Protein-Packed Breakfast Club:

The Protein-Packed Breakfast Club is filled with delicious, easy to make recipes containing 300 calories or less and packed with a minimum of 20 grams of protein. You’ll find a variety of recipes featuring dairy, protein powders, nuts, seeds, eggs and ancient grains including hot trends like overnight oats, smoothie bowls and mug cakes.
Mocha Chip Overnight Oats via RDelicious Kitchen @RD_Kitchen #overnightoats #coffee #mocha #protein #breakfast
I never thought to add coffee to my overnight oats. This is genius! The little extra pick me up, plus the mocha flavor is a perfect way to start the day. The original recipe calls for the addition of coffee and chocolate protein powder, but I only had vanilla protein powder, so I added that plus a little cocoa powder to get that same mocha flavor.

Mocha Chip Overnight Oats via RDelicious Kitchen @RD_Kitchen #overnightoats #coffee #mocha #protein #breakfast
I topped mine with some raspberries and a little chocolate granola.

Crispy Garlic Chickpeas - plant-based protein snack via Chef Julie Harrington, RD @ChefJulie_RD #legumes #chickpeas #beans #snack #plantbased #plantbasedprotein #protein

Chickpeas are always a staple in my pantry. If you’ve been reading my blog for some time now, I use chickpeas in a lot of my recipes, like my Chickpea Walnut Sandwich or my Balsamic Kale and Vegetable Saute. I’ve even put them into desserts, like my Peanut Butter Chocolate Chip Cookies and Cookie Dough Bites.

Chickpeas, also known as garbanzo beans, is a popular legume across many cuisines. These versatile legumes are also packed with high-quality plant protein, soluble and insoluble fiber, and beneficial polyunsaturated fatty acids.

Grab these for a protein-packed snack or top on a salad. I always tell clients to make these to top their salads when they are looking for a crunch factor in place of croutons.

The best part, you can customize these with any flavor you like! Craving sweet? Try roasting the chickpeas with a little cinnamon and sugar. Looking to add a little heat? Add a little chili powder to the mix.

Black Forest Chia Pudding

For breakfast, snack, or dessert, this Black Forest Chia Pudding will fill you up and satisfy your sweet tooth at the same time.https://chefjulierd.com/When I first tried kombucha, I didn’t understand how anyone could drink it, but now I LOVE it. Same goes for chia pudding. The first time I tried it, I hated the texture, but now it is something I really enjoy.

It’s funny how your taste buds change and adapt over time. This is why I when I teach kids classes, I encourage them to try a new food at least 5 times in 5 different ways. According to Ellyn Satter Institute, unfamiliar foods may have to be presented 15 or 20+ times. This goes for picky eater adults too!
https://chefjulierd.com/Over time and trying chia pudding a few different ways the texture actually grew on me and now I really enjoy it. Plus, it’s been fun creating new versions to the same chia base.
Tip: If you don’t enjoy the texture of chia pudding, whip it in a food processor or blender and it becomes a fluffy mousse consistency.
https://chefjulierd.com/What’s a better way to enjoy chia pudding, no other than a tasty black forest cake dessert! The delicious chocolate chia base, with a creamy layer, topped with sweet black cherries, and cocoa nibs, it doesn’t get much better than this!
With wholesome ingredients, this can be served as breakfast, snack, or dessert!

Black Forest Smoothie Bowl

Imagine the sweet indulgent taste of black forest cake, but a healthier version for breakfast. This Black Forest Smoothie Bowl will feel like an indulgent treat, but healthy for delicious and filling breakfast.
Black Forest Smoothie Bowl via RDelicious Kitchen @rdkitchenDisclosure: I was not compensated for this post, however I did receive free samples of Kura. All opinions are my own and not influenced in any way.
I will be the first to admit, sometimes these pretty looking bowls end up in a tumbler cup as I am rushing out the door. It’s so important to take the time to sit down and enjoy a breakfast. I personally am trying to be more mindful of that myself.
Black Forest Smoothie Bowl via RDelicious Kitchen @rdkitchenI know I’ve talked about this before, but enjoying a smoothie bowl vs. a smoothie drink (even with the same exact ingredients) can help practice mindful eating.

Making a smoothie bowl instead of an on-the-go drink can help practice mindful eating and encourage slower eating. It’s easy to suck down a smoothie in a few big gulps. By enjoying a smoothie bowl with a spoon it can help you slow down, be more aware of what you’re eating and pay attention to whether or not you are actually hungry.

Black Forest Smoothie Bowl via RDelicious Kitchen @rdkitchenI never used to be a fan of protein powders, because majority of them have a lot of weird sounding ingredients and additives in them and even have a weird after taste, but now there are more options out there from real food ingredients. I always promote real food first, but sometimes protein powders can be a great supplement to the meal. Key word = supplement. Protein powders alone shouldn’t replace a full meal. Take this smoothie bowl for example, it contains three food groups with a balanced mixture of carbs, fats, and proteins, coming from it’s wholesome ingredients – fruit, almond milk, yogurt, almond butter, and chia seeds. The protein powder is supplementing the meal to add that extra little boost of protein.
img_1742I was intrigued about Kura with it’s grass-fed dairy protein and probiotic blend. Again, the protein powder is meant to supplement the meal with adding an additional 14g of New Zealand grass-fed dairy protein, which is proven to have higher levels of omega-3s than grain-fed dairy protein. Have fun with the toppings and add your favorite healthy options!

Breakfast "Ice Cream" Sandwiches via RDelicious Kitchen @rdkitchenI was super excited when KIND featured my recipe on their newsletter including my classic green smoothie to pair with their Raspberry Chia Breakfast Bars.

If you haven’t noticed, KIND came out with these new breakfast bars. These new bars (the raspberry chia flavor in particular) contain 5 whole grains including: oats, millet, buckwheat, amaranth, and quinoa along with a filling 6 grams of fiber.
Breakfast "Ice Cream" Sandwiches via RDelicious Kitchen @rdkitchenIt is always important to eat balanced meals. My go-to tip for anyone (myself included) is to enjoy at least 3 food groups per meal (with at least one of them being a fruit or vegetable).
Breakfast "Ice Cream" Sandwiches via RDelicious Kitchen @rdkitchenThat little tip can go a long way. It will help with portion control because portion sizes will naturally start to shrink in order to include various other food groups on your plate. Plus, it will help reach the minimum recommendation of aiming to consume at least 5 fruits and vegetables a day. More matter!
