I love overnight oats. This new mocha overnight oats variation has become my new favorite! It is adapted from Lauren Harris-Pincus’ “The Protein-Packed Breakfast Club” cookbook.

I never thought to add coffee to my overnight oats. This is genius! The little extra pick me up, plus the mocha flavor is a perfect way to start the day. The original recipe calls for the addition of coffee and chocolate protein powder, but I only had vanilla protein powder, so I added that plus a little cocoa powder to get that same mocha flavor.

Ingredients

Scale
  • 1/3 cup rolled oats
  • 1/3 cup strongly brewed coffee, cooled
  • 1/3 cup plain Greek yogurt
  • 1 scoop vanilla protein powder
  • 1 teaspoon cocoa powder
  • 1 teaspoon chia seeds
  • Toppings: raspberries, chocolate raspberry granola

Instructions

  1. In a mason jar or container, add all ingredients; stir well until combined.
  2. Cover an refrigerate overnight.
  3. In the morning, before serving, top with raspberries and chocolate raspberry granola. Enjoy!

Steel cut oats vs. rolled oats vs. old-fashioned oats can get confusing. Steel cut oats are whole oat groats cut into little pieces. They are higher in fiber and protein than rolled and instant oats making it more filling and satisfying breakfast.

Ingredients

  • 1 cup steel cut oats
  • 3 cups water
  • ⅛ tsp salt
  • 1 banana, mashed
  • 1½ cup pumpkin puree
  • 2 tbsp chia seeds
  • 2 tbsp ground flaxseed
  • 2 tsp pumpkin pie spice
  • 1 tsp pumpkin pie spice extract (can sub vanilla extract)
  • ½ cup walnuts, chopped

Instructions

  1. In a pot, bring water to a boil. Add salt and steel cut oats. Reduce heat to a low simmer. Cover and cook 15. Stir once or twice during cooking time.
  2. Remove oats from heat. Stir in mashed banana, pumpkin, chia seeds, flaxseed, cinnamon, pumpkin pie spice, and pumpkin pie extract.
  3. Spray a large muffin pan with cooking spray. Fill 6 muffin cups with the steel cut oats. Sprinkle chopped walnuts on each.
  4. Freeze steel cut oats in muffin tins until solid. Remove from muffin pan and store in a ziplock bag.
  5. To enjoy warm, simple add a few drops of water and reheat in the microwave for 1 minute and 30 seconds – 2 minutes.

  2. Add oatmeal quinoa mixture to a bowl. Top with strawberries, raspberries, and almonds.

Meal prep is key for busy weeks. I still don’t understand when I am counseling clients who tell me they skip breakfast. I need my fuel first thing in the morning to start the day.

I used to never hit the snooze button, but when I make my breakfast in advance I justify the little extra time I have in the morning to get ready.

This recipe is so easy to make!


I decided to use Wild Blueberries because I love how sweet and tart they are. Any fruit would work with this recipe. Wild Blueberries have twice (2x) the antioxidant capacity of larger, cultivated blueberries.

Skip the sugary packets of oats and create a hearty bowl with simple ingredients, that I am sure are probably in your kitchen already.

Surprisingly, I am not the biggest fan of snickerdoodle cookies. I think it’s because I don’t prefer sugar cookies (the base of snickerdoodles). I am more of a chocolate chip cookie kind of gal, but I do love the warm cinnamon sugar combination from snickerdoodles.

McCormick recently came out with a new roasted cinnamon. The roasted version has a richer, deeper flavor than traditional cinnamon. If you love cinnamon and want a bigger and bolder flavor, you have to try roasted cinnamon.

  • 1 cup milk
  • 1/2 banana
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla extract
  • 1 teaspoon maple syrup
  • 1/2 tablespoon chia seeds
  • 1/4 cup vanilla kefir
  • (optional toppings): sliced banana, Betsy’s Best cinnamon chia peanut butter, snickerdoodle larabar

Instructions

  1. Combine rolled oats and milk in a saucepan over medium heat. Slice a banana into thin piece, gently fold into oats. Let cook for 2-3 minutes.
  2. Once oatmeal begins to simmer, stir vigorously to break down the banana slices.
  3. Cook until oats reach desired consistency and liquid is absorbed.
  4. Stir in cinnamon, vanilla extract, maple syrup, chia seeds, and kefir. (the kefir will make your oats super creamy!)
  5. Add desired toppings!

The base of my overnight oats is typically a plain yogurt or kefir with fruit along with the oats. I often hear that plain yogurt is too tangy and tart. One of my favorite RD tips is to stir in unsweetened applesauce. It adds that sweetness without adding added sugars like flavored yogurts have. Plus, adding a pinch of cinnamon, it adds that perfect sweetness.

Ingredients

  • 2 small apples, peeled and chopped
  • 1 teaspoon lemon juice
  • 1 1/2 tablespoons cinnamon, divided
  • 1/2 cup quick oats
  • 1/2 cup unsweetened applesauce
  • 1/2 cup plain yogurt (I used Siggi’s)
  • 2 tablespoons chia seeds
  • 1/4 cup walnuts, chopped

Instructions

  1. In a small pot combine, chopped apples, lemon juice, and 1 tablespoon cinnamon. Heat over low heat until apples soften. Remove from heat and let cool completely.
  2. In a bowl, combine oats, applesauce, yogurt, chia seeds, and remaining cinnamon. Distribute oat mixture evenly between two mason jars. Add walnuts evenly over the oats, then top with the cooked apples.
  3. Seal with a lid and store in the refrigerator overnight.

I first learned about this recipe idea from Love Grown Foods, themselves, but I decided to spruce it up a little bit by adding some other healthy ingredients. I thought it would be fun to share a “how-to” video version!
I’ve been wanting to start creating videos for awhile now on the blog, so bare with me as I am still in the learning phases of this venture.

I love this recipe because it serves one. I love muffins, but sometimes I don’t want to make a whole batch especially if I am the only one eating them. Plus it’s a fun healthy twist from a regular oatmeal kind of breakfast.

2 Minute (microwave) Oatmeal Muffin

Ingredients

  • 1 single serve Love Grown Oats container
  • 1/2 banana, mashed
  • 1 tbsp peanut butter powder (I used Crazy Richard’s)
  • 2 tbsp egg whites
  • 1 tbsp low fat milk
  • 1/4 cup blueberries
  • 1 tsp ground flaxseed
  • 1 tsp chia seeds
  • (optional) Toppings: melted peanut butter, blueberries, walnuts, etc.

Instructions

  1. Gently mix in the banana, peanut butter powder, egg whites, low fat milk, blueberries, flaxseed, and chia seeds into the oatmeal container.
  2. Microwave for 2 minutes. (If still a little wet, microwave in 15 second intervals until cooked through.
  3. Invert oatmeal cup on to a plate. Add any additional toppings, if desired. Enjoy!

Time. No one wants to give up their time in the morning. I will 100% agree with that. I try to sleep in as long as I can. I usually jump right out of bed when my alarm goes off, but lately the snooze button has become my friend.

So when you don’t have time in the morning, it is still possible to eat a great breakfast. Enter this weeks Supermarket RD’s Pick: Nature’s Path Original Hot Oatmeal.
It’s great because it’s the individual packets that is super quick and easy, plus perfect for on the go! What I LOVE about it, is that is just simply one ingredient – rolled oats.
Screen Shot 2014-10-10 at 3.26.46 PMA lot of times those oatmeal packets are using quick oats (1 minute oats) that are processed even more and stripping away good-for-you nutrients. Additionally, some of those quick oatmeal packets are adding in disodium phosphate (aka. salt) that helps them swell up faster in the microwave, hence 1 minute cooking time, increasing sodium levels.

What scares me the most with other oatmeal packets is the sugar content. I’ve seen some oatmeal packets on the shelf with up to 20 grams of sugar. That is equivalent to 4 teaspoons of sugar! Would you ever put that much sugar on top of your oatmeal if you made it from scratch, probably not.
Sweeten it yourself with some fruit and nuts on top! My favorite lately has been using frozen berries and popping them in the microwave to get all syrupy with a dollop of peanut butter on top! You can even make your own oatmeal packets and customize them with what you like.
