I have a slight obsession with chickpeas. If you search “chickpeas” on my recipe index tab, there are plenty of recipes to choose from. For me, what I think sets them apart is their texture. With a firmer texture, chickpeas are sturdier in dishes. Plus, chickpeas have a slightly nutty taste that pairs well with many flavors.

Ever wonder how I come up with new recipes?

The recipe development process:

I am usually inspired with new recipe ideas from when I travel, go out to eat, or just chatting with my friends, family, and clients. This recipe was inspired when I was counseling a client who was looking for warm plant-based breakfast ideas, that is packed with protein.

The first priority of when I develop a new recipe is taste. If it doesn’t taste good, then no one is going to want to make it or even eat it. Then I think of the nutritional value. Hello, dietitian here. Of course, I’m going to add that to the recipe development process.

During this client’s session, she mentioned she loved chickpeas. We had a brief bonding moment of our love for chickpeas. She asked if I had a chickpea breakfast recipe. I did not! Well, I have this cookie dough smoothie bowl, but she specifically asked for something warm.
Every recipe on here has a story. This is how this recipe became created. This is why I love cooking! I’m inspired daily to get creative in the kitchen.

Smashed Chickpea Scramble

Ingredients

Scale
  • 1 (15 oz.) can chickpeas, drained and rinsed
  • 2 tablespoons water
  • 1 1/2 tablespoon olive oil, divided
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup hummus
  • 3 cups baby spinach
  • 1 small avocado, diced
  • 1 pint grape tomatoes, sliced

Instructions

  1. In a bowl, add chickpeas, water, and 1 tablespoon olive oil. Mash with the back of a fork, leaving some whole for texture.
  2. Fold in turmeric, cumin, ginger, garlic powder, salt, pepper, and hummus until well combined.
  3. Heat remaining 1/2 tablespoon olive oil in a skillet. Add the smashed chickpea mixture with spinach. Saute until chickpeas are warmed through and spinach has wilted.
  4. Serve with diced avocado and tomatoes.

Make dinner time less stressful with easy prep and easy clean-up. This Sheet Pan Bruschetta Chicken with Roasted Asparagus is quick, nourishing, and delicious!


Ingredients

Scale
  • 4 pieces chicken breast, boneless and skinless
  • salt and pepper
  • 1 lb. asparagus, ends trimmed
  • 1 teaspoon olive oil
  • 4 ounces mozzarella cheese
  • For the bruschetta:
  • 2 cups cherry tomatoes, halves
  • 1 tablespoon olive oil
  • 1 teaspoon balsamic vinegar
  • 2 cloves garlic, minced
  • ¼ cup fresh basil, chiffonade
  • salt and pepper, to taste

Instructions

  1. Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper, or spray with non-stick spray.
  2. In a small bowl, combine the tomatoes, olive oil, balsamic vinegar, garlic, basil, salt, and pepper. Set aside.
  3. Season both sides of the chicken with salt and pepper. Place chicken in a line on one end of the prepared baking sheet.
  4. Place asparagus on the opposite side of the baking sheet in a single layer. Drizzle olive oil, salt, and pepper over asparagus. Toss to combine to evenly coat.
  5. Place in the oven and bake for 25 minutes. Remove from oven and top chicken with mozzarella cheese. Toss the asparagus. Cook for an additional 5-10 minutes until chicken reaches an internal temperature of 165 degrees F and asparagus is tender.
  6. Top chicken with bruschetta and serve immediately.

Notes

If chicken breasts are thick, cook chicken for 10 minutes alone first before adding asparagus to the pan.

Family meals were a big part of my life growing up. Even with my sisters and I involved in different activities, my family made it a point to get together around the table for family meals.

Regular family meals are linked to the kinds of outcomes that we all want for our children: higher grades and self-esteem, healthier eating habits and weights, and less risky behavior. (source)

When I go home to have family dinner, I soak that feeling in. Since I’ve moved out, I still try and get home for family dinner at least once a week. It’s a time where we all catch up on each other lives over a delicious home cooked meal. There are always lots of laughs. Charlie (our dog) knows exactly when our dad gets up from the table he can slide in for a few bites from my plate.
I’m excited to share family meals with my own family one day.

Sheet pan dinners are easily customizable. Choose a protein and some veggies, plus a seasoning blend you like. For this sheet pan dinner, I tried a Cajun spice blend. I liked the extra little kick it gave the dish and it was delicious on the cauliflower.

The best part about sheet pan dinners – only one pan to clean up! Can’t beat that! Plus, if you have leftovers, pack it for lunch. Looking to mix it up? Try serving over a bed of greens or quinoa.

Sheet Pan Cajun Chicken With Vegetables

Ingredients

Scale
  • 1/4 cup olive oil
  • 3 tablespoons lemon juice
  • 2 tablespoons Cajun spice blend
  • 2 tablespoons garlic, minced
  • 1 lb. boneless skinless chicken breast (4 pieces)
  • 12 oz (1 1/2 cups) green beans, trimmed
  • 3 cups cauliflower (1 large head), cut into florets
  • 1 (12 oz.) jar roasted red peppers, drained and chopped

Instructions

  1. Preheat oven to 450 degrees F.
  2. In a small bowl, whisk together the olive oil, lemon juice, Cajun spice blend, and garlic. Set aside.
  3. Evenly spread the green beans, cauliflower, and roasted red peppers on the baking sheet. Drizzle 2 tablespoons of marinade over the vegetables and toss until combined. Cook in the oven for 15 minutes.
  4. Add chicken to the marinade and let marinate for 15 minutes.
  5. Remove vegetables from the oven and nestle the pieces of chicken between the vegetables onto the pan. Bake for an additional 15-20 minutes until internal temperature of the chicken reaches 165 degrees F and vegetables are tender.

Meal prep is key for busy weeks. I still don’t understand when I am counseling clients who tell me they skip breakfast. I need my fuel first thing in the morning to start the day.

I used to never hit the snooze button, but when I make my breakfast in advance I justify the little extra time I have in the morning to get ready.

This recipe is so easy to make!


I decided to use Wild Blueberries because I love how sweet and tart they are. Any fruit would work with this recipe. Wild Blueberries have twice (2x) the antioxidant capacity of larger, cultivated blueberries.

Ingredients

  • 2 tablespoons rolled oats
  • 1 tablespoon chia seeds
  • 2 tablespoons plain Greek yogurt
  • 1 teaspoon maple syrup
  • 1/4 cup milk
  • 1/2 cup wild blueberries
  • 1/4 cup low sugar granola

Instructions

  1. In a mason jar (or small bowl) combine rolled oats, chia seeds, Greek yogurt, maple syrup, and milk. Stir to combine. Refrigerate overnight.
  2. In the morning top with wild blueberries and granola.

I really liked how it turned out and now I purposely buy all these ingredients to make this recipe over and over again. Since my accidental recipe creation, I’ve made this recipe at least 3 more times already.

Balsamic Kale and Vegetable Saute

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 red onion, sliced
  • 1 red pepper, sliced
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1 (15 oz.) can chickpeas, drained and rinsed
  • 1-pint grape tomatoes, halved
  • 1 large bunch kale (~ 6 cups), chopped
  • 2 tablespoons balsamic vinegar
  • salt and pepper, to taste
  • (optional) parmesan cheese, to garnish

Instructions

  1. Add olive oil in a large skillet over medium heat. Saute the onions and peppers for about 1 minutes. Add garlic and cook for an additional minute, until garlic is fragrant.
  2. Add mushrooms and chickpeas. Cook until mushrooms are tender. (Use a lid to generate steam if the pan starts to become dry)
  3. Add kale, tomatoes, and balsamic vinegar. Toss vegetables to combine. Place a lid on top to allow kale to wilt. Remove lid and cook for an additional 2 minutes, removing excess liquid.
  4. Season with salt and pepper, as needed.
  5. Remove vegetable saute from the pan and garnish with parmesan cheese (if using).

Almond Pear Crisp for Two

Ingredients

  • 1 can Libby’s Pear Halves
  • 1 teaspoon cinnamon, divided
  • 1/4 cup oats
  • 2 teaspoons maple syrup
  • 1 tablespoon almond butter
  • 2 tablespoons almonds, chopped
  • 1/4 cup full-fat coconut milk, chilled
  • 1 tablespoon powdered sugar

Instructions

  1. Preheat oven to 375 degrees F.
  2. Drain and dice pears. In a small bowl, toss pears with 1/2 teaspoon cinnamon. Evenly distribute pears into two oven-safe ramekins.
  3. In a small bowl, combine remaining 1/2 teaspoon cinnamon, oats, maple syrup, almond butter, and almonds. Mix until combined, creating a crumbly texture. Add crumble on top of pears in the ramekins.
  4. Bake in the oven for 10 minutes, until crumble begins to brown.
  5. As the pear crisps are baking, beat coconut milk and powdered sugar until fluffy.
  6. Remove pear crisps from the oven and top with coconut whipped cream. Serve warm.

I haven’t had the best luck lately. When I was bringing groceries into my apartment, my canvas bag strap broke and the eggs in my bag ended up all over the floor of my kitchen. Back to the store I went because I was shooting a video for my Flourless Peanut Butter Chocolate Muffins that day.

Then, you may have seen on Instagram that I ended up with 3 stitches on my finger this week.

I headed to urgent care while two interns continued to prep for the class. These dietetic interns just started working with me and with my little accident, they saved the day! I got stitched up, headed back and the class was ready to go. The interns were rock stars! The class was ready to go and the class was a success!

Yes, I may have had my kerfuffle moments, but one thing that was consistently great this week, was breakfast. This Green Goddess Smoothie Bowl was enjoyed all week. I’ve been on a total smoothie kick lately and have been making this exact combo daily. I really do enjoy the act of eating smoothie bowls with a spoon. It helps practice mindful eating and you get to enjoy it for so much longer.

Ingredients

  • 1/4 cup mango, frozen
  • 1/2 avocado
  • 1/2 small banana [frozen is best for creaminess]
  • 1 cup spinach
  • 3 strawberries
  • 2 tablespoons chia seeds
  • 1 teaspoon cinnamon
  • 1 cup unsweetened almond milk
  • (optional toppings): hemp hearts, sliced strawberries, unsweetened coconut

Instructions

  1. Add all ingredients into a blender and blend until smooth.
  2. Pour into a bowl and top with your favorite toppings.

Calling all PB&J lovers – this recipe is for you! Turn a classic into something new and exciting, like this Ultimate PB&J.

This month The Recipe ReDux challenged members to cook with at least 3 ingredients that are actually in your refrigerator or pantry right now. 99% of the time, my kitchen will never be without peanut butter, bananas, bread, and chia seeds. They are staples.

I was craving a classic PB&J this weekend, but with this challenge, I wasn’t just going to slather peanut butter and jelly on bread and call it a recipe, so I decided to add a little culinary twist to this classic for this RR challenge.

For a good PB&J (or any sandwich), make sure to start with hearty whole grain bread. Next, comes my favorite part, the peanut butter! I ran out of one of my favorites, Betsy’s Best, so I made my own version by mixing natural peanut butter with cinnamon and chia seeds. Then, topped with bruleed bananas, strawberries, and chopped peanuts, I’d say this is definitely gourmet compared your standard PB&J.

  • 2 tablespoons natural peanut butter
  • 1 teaspoon cinnamon
  • 1 teaspoon chia seeds
  • 1 teaspoon coconut oil
  • 1 banana, sliced in half lengthwise
  • 2 strawberries, sliced
  • 1 tablespoon peanuts, chopped

Instructions

  1. In a small bowl, stir together the peanut butter, cinnamon, and chia seeds. Set aside.
  2. In a small pan over medium heat, melt the coconut oil. Place bananas in pan and cook until golden brown.
  3. On one slice of bread, spread the peanut butter. Top with the cooked bananas, strawberry slices, and chopped peanuts. Place other slice of bread on top and enjoy!

This recipe was inspired by leftovers and of course Toufyan Bakeries. Adrian and I like to watch Chopped and anytime I have a refrigerator full of leftovers, I pretend I am on an episode. In this mystery basket, the items that I had to work with was leftover roasted butternut squash, an already baked sweet potato, and kale that was on its last legs.

Butternut Squash & Kale Pita Pizza via RDelicious Kitchen @RD_KitchenI was pleasantly surprised how thick, creamy, and delicious the base of the sweet potato came out, which helped the pita not get soggy when baked. The edges crisped up perfectly in the oven.
I wanted to try something different than mozzarella cheese on top, so I went for fontina. It paired perfectly with this flavor combination since this semi-soft cow’s cheese has a gentle buttery and nutty flavor.

Butternut Squash and Kale Pita Pizza

Ingredients

Scale
  • 2 whole wheat Toufayan Pita Bread pitas
  • 1 sweet potato, baked skin removed
  • 2 cloves garlic, minced
  • 2 tablespoons low-sodium chicken stock
  • 1 teaspoon black pepper
  • 1 cup butternut squash, cubed and roasted
  • 2 teaspoons olive oil
  • 1 small red onion, sliced
  • 2 cups kale, stems removed, roughly chopped
  • 1/2 cup fontina cheese, shredded
  • (optional) 1 tablespoon balsamic glaze

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Remove the skin from the sweet potato. In a small food processor, puree the sweet potato, garlic, chicken stock, and black pepper. Spread evenly on both of the pitas.
  3. In a large saute pan over low-medium heat, saute onions until caramelized. Just as the onions are about done, add the kale and saute until kale has wilted. Season with salt and pepper.
  4. Assemble your pizzas by spreading the sweet potato mixture at the bottom, adding the caramelized onions and kale, then butternut squash.
  5. Sprinkle with cheese and place in the oven for 2-3 minutes, until cheese has melted and pizza is warmed through.
  6. Let slightly cool and drizzle with balsamic glaze, if using.

  • 1 prickly pear, peeled and diced
  • 1 cup frozen wild blueberries
  • 1/2 cup unsweetened almond milk
  • 1/2 tablespoon flax seeds
  • 1 teaspoon cinnamon
  • 1 banana, peeled
  • Ice (optional)

Instructions

  1. Blend all ingredients together until smooth and creamy.
  2. Serve immediately.
