The Instant Pot continues to be magical. What takes over an hour to cook, now is done in 35 minutes.

Meal prep strategies

Every week now, I’ve been prepping at least one whole grain for the week. Everyone meal preps a little differently. I tend not to make full meals, but to get the cooking process started, like chopping veggies, making a batch of whole grains, grilling a few pieces of chicken, roasting a tray of veggies, etc.

This way, I am not mandated to a certain meal and it gives me more flexibility while allowing to save time during a busy week.

Prep a batch of whole grains, like wheat berries, to add on top of a salad, in a stir-fry, mixed into a soup, as a side dish, or even served up breakfast-style. Switch up the prepped whole grain each week for variety.

What are Wheat Berries?

Wheat Berries are the whole grain form of wheat – the whole, complete grain before it has undergone any processing. They’re a high-fiber whole grain, containing the bran, germ, and the endosperm. Wheat berries typically take longer to cook because they are not processed and it takes a while for the liquid to penetrate through the bran to soften the grain.

When cooked, wheat berries have a chewy bite and a subtle nutty, earthy flavor. They’re sturdy enough to handle bold dressings in salads and still delicate enough to taste delicious with some milk, honey, and cinnamon.

Instant Pot Wheat Berries

Ingredients

Scale
  • 3 cups water
  • 1 cup hard red spring wheat berries
  • Pinch of salt

Instructions

  1. Combine water, wheat berries, and salt in the Instant Pot. Secure the lid and seal the valve.
  2. Set the manual timer for 35 minutes.
  3. When done, do quick release by moving the valve to vent the steam. Let all the steam release.
  4. Drain the wheat berries and enjoy as is or incorporate into other recipes.

Steel cut oats vs. rolled oats vs. old-fashioned oats can get confusing. Steel cut oats are whole oat groats cut into little pieces. They are higher in fiber and protein than rolled and instant oats making it more filling and satisfying breakfast.

Ingredients

Scale
  • 1 cup steel cut oats
  • 3 cups water
  • ⅛ tsp salt
  • 1 banana, mashed
  • 1½ cup pumpkin puree
  • 2 tbsp chia seeds
  • 2 tbsp ground flaxseed
  • 2 tsp pumpkin pie spice
  • 1 tsp pumpkin pie spice extract (can sub vanilla extract)
  • ½ cup walnuts, chopped

Instructions

  1. In a pot, bring water to a boil. Add salt and steel cut oats. Reduce heat to a low simmer. Cover and cook 15. Stir once or twice during cooking time.
  2. Remove oats from heat. Stir in mashed banana, pumpkin, chia seeds, flaxseed, cinnamon, pumpkin pie spice, and pumpkin pie extract.
  3. Spray a large muffin pan with cooking spray. Fill 6 muffin cups with the steel cut oats. Sprinkle chopped walnuts on each.
  4. Freeze steel cut oats in muffin tins until solid. Remove from muffin pan and store in a ziplock bag.
  5. To enjoy warm, simple add a few drops of water and reheat in the microwave for 1 minute and 30 seconds – 2 minutes.

With her stellar resume, I was excited to ask her questions about her latest project – “The Healthy Meal Prep Cookbook“.
Q: You have written a wonderful cookbook “The Healthy Meal Prep Cookbook.” What inspired you to write a book about the topic of meal prep?
A: Juggling a busy schedule can make it difficult to prepare healthy family meals, especially during the week. As a mom of three and a registered dietitian, I understand that struggle all too well. Over the years I have developed a weekly meal prep routine, and it has been a lifesaver. I wrote The Healthy Meal Prep Cookbook to share my tips and tricks for getting food on the table fast.
Q: How do you think your meal prep strategies help families eat healthier?
A: When you plan out your meal and prepare them ahead of time, you avoid that last minute trip to a fast food joint or stopping at the local deli for an oversized muffin on the way to work. Not only do you eat healthier, you can save money by purchasing these last minute meals.
Q: What are your suggestions for dealing with a picky eater in the family?
A: Making a picky eater involved in the process can help them enjoy food and become exposed to foods they may not be used to. It can start with helping to select recipes. I loved taking my kids when they were younger to the supermarket and showing them the different fruits and vegetables. As my kids got older, I showed them how to determine the ripeness of a fruit and/or vegetable. Kids also love getting down and dirty in the kitchen from mixing to measure to even zesting citrus fruit. Setting the table has also become a way kids can also get involved.
Q: What would you say are top three pantry items that every family should have stocked in their pantry? 
Quinoa: This whole grain (which is technically a seed) provides 8 grams of protein and 5 grams of fiber per cooked cup. It’s easy to pair with beans, serve alongside a protein like chicken, beef, or fish, and even toss on a salad for added protein.
Beans: Beans are an excellent source of fiber providing about 7.5 grams per ½ cooked cup. I prefer the ease of canned beans, but will look for those with no added salt. Beans can be tossed in a soup, over a salad, used to make burgers, chili, and even rice and beans.
Canned tuna: If you forgot to defrost your protein or finished it up for the week, canned tuna can come to the rescue. I prefer chunk light tuna canned in water and can toss it over a salad, mix it with celery, apples, Greek yogurt and light mayo for a delicious salad, or stuff it into a whole grain pita with my Chopped Chickpea Salad.
Q: What is your favorite recipe from the cookbook?
A: I am a huge breakfast fan, so Zippy’s Shakshuka and the Brooklyn Breakfast are two of my favorites. Zippy, my mother, always made Shakshuka (eggs in tomato sauce) for me and my 4 siblings when she was in a hurry and kept jarred crushed tomatoes and eggs on hand in case she had to whip something up in a hurry. As for the Brooklyn Breakfast, I was born in Brooklyn and smoked salmon and cream cheese was part of my regular diet. To this day, it is still one of my favorites.
Q: How long did it take you to write this book?
A: I wrote this cookbook in about 6 weeks and tested each recipe (some recipes I tested several times). I did work through weekends and did not take any days off. This is pretty unusual for cookbook authors but was the deadline I agreed to meet.
Q: What is your favorite spice to cook with?
A: I love cinnamon. It just has such a warming feeling that makes me feel so good. I used it in my baked goods (like scones and muffin), pancake batters, and oatmeal.

Oatmeal is one of those “stick-to-your-guns” kind of breakfast that I know will fuel me through the morning. Problem is, I don’t always have the time in the morning. I will savor that extra 10 minutes of sleep knowing I have breakfast ready to go waiting for me. I’ll even sacrifice doing my hair in the morning for extra sleep. Top buns for the win.

Half the time I am so rushed in the morning, I drink my coffee on the way to work and then eat my breakfast as I am returning emails and getting organized for my day.

  • [optional] Toppings: fresh fruit, unsweetened coconut, unsalted nuts

Instructions

  1. Simple stir all ingredients together.
  2. Cover and refrigerate overnight.
  3. The next morning add toppings and enjoy chilled.
