Steel cut oatmeal is a hearty wholesome breakfast, but its downfall is that it takes about 15-20 minutes to cook. I’d rather get an extra 20 minutes of sleep. I know I’m not the only one!

Want to enjoy steel cut oats in under 2 minutes? Meal prep to the rescue! Spend 20 minutes one day and have steel cut oats all week. Even if they weren’t steel cut oats and rolled oats instead, the time to take out all the mix-ins is just too much when you are trying to get out the door. Instead, simply take your little frozen single-serving steel cut oat “muffin”, add a few drops of water and pop it into the microwave.

steel cut vs. rolled oats vs. old fashioned oats – what’s the difference?

Steel cut oats vs. rolled oats vs. old-fashioned oats can get confusing. Steel cut oats are whole oat groats cut into little pieces. They are higher in fiber and protein than rolled and instant oats making it more filling and satisfying breakfast.

Ingredients

Scale
  • 1 cup steel cut oats
  • 3 cups water
  • ⅛ tsp salt
  • 1 banana, mashed
  • 1½ cup pumpkin puree
  • 2 tbsp chia seeds
  • 2 tbsp ground flaxseed
  • 2 tsp pumpkin pie spice
  • 1 tsp pumpkin pie spice extract (can sub vanilla extract)
  • ½ cup walnuts, chopped

Instructions

  1. In a pot, bring water to a boil. Add salt and steel cut oats. Reduce heat to a low simmer. Cover and cook 15. Stir once or twice during cooking time.
  2. Remove oats from heat. Stir in mashed banana, pumpkin, chia seeds, flaxseed, cinnamon, pumpkin pie spice, and pumpkin pie extract.
  3. Spray a large muffin pan with cooking spray. Fill 6 muffin cups with the steel cut oats. Sprinkle chopped walnuts on each.
  4. Freeze steel cut oats in muffin tins until solid. Remove from muffin pan and store in a ziplock bag.
  5. To enjoy warm, simple add a few drops of water and reheat in the microwave for 1 minute and 30 seconds – 2 minutes.

Description

Ingredients

Scale
  • 2 (15-ounce) cans chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 350 degrees F. Line a large baking sheet with parchment paper or spray with cooking spray.
  2. Dry chickpeas thoroughly. In a bowl, toss the chickpeas with olive oil and lemon to coat. Sprinkle with garlic powder and salt. Toss again.
  3. Transfer chickpeas in an even layer to the prepared baking sheet.
  4. Bake for 50 minutes to 1 hour, stirring occasionally, until crispy. Let cool for at least 1 hour, which will make the chickpeas crunchier as they cool.

  • 2 cups milk
  • 2 tablespoons maple syrup

Instructions

  1. Place oatmeal and milk in a saucepan, and bring to a boil. Stir over low heat for 5-7 minutes, until oatmeal begins to thicken. Stir in the maple syrup and cooked quinoa.
  2. Add oatmeal quinoa mixture to a bowl. Top with strawberries, raspberries, and almonds.

Meal prep is key for busy weeks. I still don’t understand when I am counseling clients who tell me they skip breakfast. I need my fuel first thing in the morning to start the day.

I used to never hit the snooze button, but when I make my breakfast in advance I justify the little extra time I have in the morning to get ready.

This recipe is so easy to make!


I decided to use Wild Blueberries because I love how sweet and tart they are. Any fruit would work with this recipe. Wild Blueberries have twice (2x) the antioxidant capacity of larger, cultivated blueberries.

Balsamic Kale and Vegetable Saute

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 red onion, sliced
  • 1 red pepper, sliced
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1 (15 oz.) can chickpeas, drained and rinsed
  • 1-pint grape tomatoes, halved
  • 1 large bunch kale (~ 6 cups), chopped
  • 2 tablespoons balsamic vinegar
  • salt and pepper, to taste
  • (optional) parmesan cheese, to garnish

Instructions

  1. Add olive oil in a large skillet over medium heat. Saute the onions and peppers for about 1 minutes. Add garlic and cook for an additional minute, until garlic is fragrant.
  2. Add mushrooms and chickpeas. Cook until mushrooms are tender. (Use a lid to generate steam if the pan starts to become dry)
  3. Add kale, tomatoes, and balsamic vinegar. Toss vegetables to combine. Place a lid on top to allow kale to wilt. Remove lid and cook for an additional 2 minutes, removing excess liquid.
  4. Season with salt and pepper, as needed.
  5. Remove vegetable saute from the pan and garnish with parmesan cheese (if using).

  • 1/4 cup chickpeas, skins removed
  • 1 teaspoon maple syrup
  • 2 teaspoons almond butter
  • 2 teaspoons mini chocolate chips
  • 1 small banana, frozen
  • 1 tablespoon almond butter
  • 1 scoop vanilla protein powder
  • 3/4 cup milk of choice

Instructions

  1. For the cookie dough bites: In a small bowl, combine chickpeas, maple syrup, and 1 teaspoon almond butter. Mash to combine. Fold in mini chocolate chips. Roll into small balls. Refrigerate for at least 15 minutes, or overnight.
  2. For the smoothie: In a blender, combine banana, 1 tablespoon almond butter, vanilla protein powder, and milk. Blend to combine.
  3. For a thinner consistency, add water. For a thicker consistency, add ice.
  4. Pour smoothie into a bowl and top with chickpea cookie dough bites.

I originally posted this recipe back in 2014 on my travels to Blog Brulee in Vermont. Boy, a lot has changed since that conference. That conference hands down was the most amazing experience and I contribute a lot of my blogging success from that conference. It gave me the confidence to turn my hobby into my business.
One of my biggest goals was to focus on my food photography. When you are sharing a recipe online, it has to look visually appealing. While some of my old recipes taste delicious, they are not very photogenic. I am working on updating old recipes this summer. This is one of my favorite energy bite recipes, but the photo definitely needed an upgrade.

If you are a coffee lover, you’ll love the addition of the espresso powder. It will give you that little jolt to power you through the afternoon. Find espresso powder in the coffee aisle of the grocery store.
Make these ahead and enjoy all week (if they even last that long). Just remember to store in the refrigerator, or they dry out and get very crumbly.

Vanilla Espresso Energy Bites

Ingredients

Scale
  • 1½ cup rolled oats
  • ¾ cup ground flax seed
  • ½ cup chocolate chips
  • 1 cup vanilla almond butter (I used Justin’s)
  • 2 tbsp pure maple syrup
  • 1 tablespoon espresso powder

Instructions

  1. Add oats, flax seed, and chocolate chips in a large bowl. Toss to combine.
  2. Add almond butter, maple syrup, and espresso in a small bowl and microwave for 30 seconds or until softened.
  3. Combine the almond butter mixture with the oat mixture until combined. The mixture will be thick. Shape into tablespoon-sized balls. Store in refrigerator.

I haven’t had the best luck lately. When I was bringing groceries into my apartment, my canvas bag strap broke and the eggs in my bag ended up all over the floor of my kitchen. Back to the store I went because I was shooting a video for my Flourless Peanut Butter Chocolate Muffins that day.

Then, you may have seen on Instagram that I ended up with 3 stitches on my finger this week.
@RDeliciousKitchen InstagramThursday, I was at Living Plate getting ready for a cooking class and washing a mandolin and accidentally sliced my finger. I headed to urgent care while two interns continued to prep for the class. These dietetic interns just started working with me and with my little accident, they saved the day! I got stitched up, headed back and the class was ready to go. The interns were rock stars! The class was ready to go and the class was a success!

Yes, I may have had my kerfuffle moments, but one thing that was consistently great this week, was breakfast. This Green Goddess Smoothie Bowl was enjoyed all week.   • 1/2 avocado
  • 1/2 small banana [frozen is best for creaminess]
  • 1 cup spinach
  • 3 strawberries
  • 2 tablespoons chia seeds
  • 1 teaspoon cinnamon
  • 1 cup unsweetened almond milk
  • (optional toppings): hemp hearts, sliced strawberries, unsweetened coconut

Instructions

  1. Add all ingredients into a blender and blend until smooth.
  2. Pour into a bowl and top with your favorite toppings.

Why not get fruits and vegetables in all in one shot? Salads don’t have to be boring. Someone recently said to me, “Since you are a Registered Dietitian, you’re probably going to tell me to eat more salads right”? As a Registered Dietitian, I’ll encourage you to eat more fruits and vegetables, that may be in the form of salad, but in other ways as well. The problem is “salad” sounds so boring. Unfortunately, most often the first thought of salad is the boring romaine lettuce, tomatoes, and maybe a few slices of cucumber.

The key to building a delicious salad is variety. Don’t get stuck with the same combination. Try adding different textures. I like to add roasted vegetables on top of a bed of greens to add an extra pop of flavor. Every week I roast a large tray of vegetables. Throughout the week they get tossed on salads, mixed into a stir fry or scrambled with eggs. That one meal prep solution has been a weekly staple for me.

I had the most delicious raspberry vinaigrette at a restaurant and I recreated my version for this salad. The sweetness naturally comes from fresh raspberries and balanced with white wine vinegar. Salad dressings are surprisingly very easy to make. This dressing can last for about a week in the refrigerator. Just give it a gentle shake before using.

Spring Salad with Raspberry Vinaigrette

Ingredients

Scale
  • 4 cups arugula
  • 1/2 cup roasted asparagus, chopped
  • 1/2 cup raspberries
  • 1/4 cup red onion, thinly sliced
  • 2 ounces almonds, chopped
  • 2 ounces goat (or feta cheese), crumbled
  • For the dressing: (makes about 3/4 cup)
  • 1/4 cup fresh raspberries
  • 1/4 cup white wine vinegar
  • 1 small shallot, finely chopped
  • 1/2 cup olive oil
  • Salt and ground pepper, to taste

Instructions

  1. On two plates, layer the arugula, asparagus, raspberries, red onion, almonds, and goat cheese.
  2. For the dressing: Combine all ingredients in a blender or food processor and blend until smooth. Season to taste with salt and pepper. Store extra dressing the in the refrigerator for up to a week.
  3. Drizzle salads with dressing.

I’ve recently been loving adding hummus to dressing and marinades. It adds great flavor and helps thicken it to create a creamy dressing. I recently made a lemon hummus tahini dressing for a grilled caesar salad recipe. So good!

Hummus is also an interesting idea for a coating in place of your typical dredging mixture. Next time you bread chicken cutlets, skip the milk and egg mixture and roll in a thin layer of hummus, then coat in a crunchy topping.

Don’t stop there! Hummus is also great in dip recipes to replace saturated fats with a heart-healthy plant-based protein hummus. A traditional warm spinach dip has at least one or a mixture of these calorically dense ingredients: cream cheese, mayonnaise, or sour cream. This Cheesy Hummus Spinach dip is just as creamy with swapping in hummus instead.

What is your favorite Sabra hummus flavor? My top three favorites are the classic, roasted red pepper, and olive tapenade. I recently saw a lemon twist flavor that I definitely need to try.

Cheesy Spinach Hummus Dip

Ingredients

Scale
  • 1 (12 oz.) container Sabra Classic Hummus
  • 2 cloves garlic, minced
  • 2 cups spinach, chopped
  • 3/4 cups white cheddar cheese, shredded
  • 2 teaspoons Italian seasonings
  • 1/4 cup green onions, chopped + additional for garnish
  • 1/4 cup parmesan cheese

Instructions

  1. Preheat oven to 375˚F.
  2. Combine Sabra Classis Hummus, garlic, spinach, cheddar cheese, Italian seasonings, and scallions. Spread into small casserole dish. Sprinkle parmesan cheese over the top.
  3. Bake for 20 minutes or until heated through and cheese on top is melted.
  4. Top with additional green onions and serve with pita crackers or vegetables.
