This is the first-ever Grocery Store Finds post, where I haven’t actually tried the products yet myself. Last month was Expo East and was hoping to get there, but my schedule was already booked with cooking classes and other events. I vicariously was following the #expoeast on Instagram and seeing all these new products that were announced and soon to hit the shelves if they haven’t already.

Maybe it’s the dietitian in me, but when I see a new product, I am intrigued. Some of these brands you probably have heard of before, but they are expanding their product lines with new items.

Vegan mayo? How is that even possible. Right on the jar, it says that it is made with avocado oil, but that is liquid. I did a little research and found out how they make a spreadable consistency. The magic is aquafaba! Aquafaba is the liquid leftover from soaking or cooking garbanzo beans. The water absorbs proteins and starches from the beans, becoming more viscous along the way. Its viscosity is similar to that of eggs and egg whites, making aquafaba the perfect egg substitute. Chosen Foods blends aquafaba with avocado oil, to create a 100% vegan mayo that can truly be described as plant-based. Use this mayo as you normally would – on sandwiches, wraps, or as a base for sauces and dressings.

A protein muffin made in 60 seconds – I’m intrigued! I was very excited to see sorghum listed at the first ingredient. Sorghum is, a cereal grain native to Asia and Africa, that is naturally gluten-free, packed with protein and fiber, and full of antioxidants like policosanols. They use pumpkin seed protein to add extra protein for a quick and filling breakfast or snack.

Cece’s Veggie Noodle Co. has expanded its line beyond veggie noodles. They now have rice varieties and veggie-packed meals. What I like about these are that they are fresh and super convenient. I don’t know about you, but have you ever tried spiralizing a beet? It looks like a murder scene on my cutting board. Take a short cut and utilize these conveniently prepped veggies.

I’ve made my own dessert hummus before, but guys this Delighted by Dessert Hummus is by far creamier than what I’ve ever made. I loved the sweet snickerdoodle flavor. I’ve been dunking strawberries in this dessert hummus on repeat for my evening snack lately.

I was intrigued by Puroast Coffee. They sent me a sample of their low acidic coffee to try. I usually add a little splash of milk to my coffee in the morning, but this was the first time I could actually drink it completely black. It is very smooth and much less bitter. Puroast has 70 percent less acidity than any other coffee. My day doesn’t start without a cup of coffee.

This month, Recipe ReDux members were challenged to create new healthy takes on eating savory or dinner-inspired dishes for breakfast.
Growing up in an Italian family, bread was accompanied with dinner on the side with any dish. We did eat a lot of Italian dishes growing up, so fresh Italian bread was typically served with those dinners. The times we strayed away from our Italian roots, there was still bread on the table and often cornbread since that was one of my sister’s favorites.

I remember not thinking some of the dinners didn’t pair well with the sweet corn bread, so I took the opportunity with this challenge to change it up a little and create a savory corn muffin.

These savory corn muffins were great on their own. I also melted a little cheddar cheese on top. My mind instantly started thinking of recipes to pair these muffins with, like a hearty soup, chili, or sauteed collard greens. These would even be great cut up and turned into a savory corn bread stuffing.

Sun Dried Tomato Corn Muffins

Ingredients

Scale
  • 1 ¼ cup finely ground cornmeal
  • ½ cup white whole-wheat flour
  • 1 ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 tablespoon butter, melted
  • 1 egg
  • 1 teaspoon vanilla extract
  • ½ cup plain full fat (or 2%) Greek yogurt
  • 2 tablespoons honey
  • ¼ cup milk
  • 3/4 cup sun-dried tomatoes, chopped

Instructions

  1. Preheat oven to 350 degrees F. Spray eight wells of the muffin tin with cooking spray.
  2. In a medium bowl, whisk together cornmeal, flour, baking powder, baking soda, and salt.
  3. In a small bowl, whisk together melted butter, egg, vanilla extract, yogurt, honey, and milk.
  4. Stir wet ingredients into dry ingredients. Mix until just combined. Fold in sun-dried tomatoes.
  5. Scoop about 1/3 cup of batter into eight muffin wells.
  6. Bake for 13-15 minutes or until tops turn golden and center feels firm to the touch.

Ingredients

Scale
  • 2 eggs, (at room temp) beaten
  • 2 cups natural peanut butter (or almond butter)
  • 1/2 cup maple syrup
  • 1 1/2 cups pumpkin puree
  • 6 tablespoons unsweetened cacao powder (or unsweetened cocoa powder)
  • 2 teaspoons baking soda
  • 2 teaspoons vanilla extract
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat oven to 350 degrees F. Spray a muffin tray with cooking spray or line with parchment liners.
  2. In a large bowl, combine eggs, peanut butter, maple syrup, pumpkin puree, cacao powder, baking soda, and vanilla extract. Whisk together until smooth and creamy.
  3. Fold in the chocolate chips.
  4. Fill muffin tins 3/4 full.
  5. Bake for 30-35 minutes, until a toothpick, comes out clean.

One of the cooking goals that I’ve been working on is working with flour alternatives. There are so many varieties of flours (almond flour, quinoa flour, coconut flour, oat flour, plus so many more!) on the shelves in the grocery store and I’ve been intrigued. Mainly, because I am a food science nerd and I want to learn and understand their baking properties, but also I think many of us are trying to trim back on the amount of refined grains we are consuming (ie. white flour), so it’s been a fun challenge baking with these flour alternatives.

I’ve quickly learned that these alternative flours do not have that perfect 1:1 ratio. FYI, coconut flour sucks up so much moisture. I tried baking cookies with coconut flour and when I picked one up it crumbled right in my hand. Note to self: Add more liquid and maybe pair coconut flour with other flours too. (I’m still working on that recipe!)

Ingredients

Scale
  • 3 eggs
  • 3 bananas
  • 1/3 cup maple syrup
  • 1 tsp vanilla extract
  • 1/3 cup plain Greek yogurt
  • 1 3/4 cup almond flour
  • 1/4 cup coconut flour
  • 1 teaspoon baking powder
  • 11/2 teaspoon cinnamon
  • 1/8 teaspoon salt

Instructions

  1. Preheat oven to 350 degrees F. Spray a muffin tin with cooking spray and set aside.
  2. In a food processor or blender, blend the eggs, bananas, maple syrup, and vanilla extract, until blended through and fluffy (to incorporate air). Pour into a bowl and fold in the yogurt.
  3. In a separate bowl, sift together the almond flour, coconut flour, baking powder, cinnamon, and salt.
  4. Fold wet ingredients into dry and stir until just combined.
  5. Pour muffin batter into muffin tins and bake for 30-35 minutes or until golden brown. (Insert a toothpick into the center of a muffin at they are done when it comes out clean. Center will also spring back when pressed.)

Pumpkin Chocolate Chip Muffins

I know it’s not Fall yet .. but I am anticipating the PUMPKIN extravaganza that’s coming soon! I am obsessed with anything pumpkin. If you are too, definitely try these muffins!!

Pumpkin Chocolate Chip Muffins
Makes 12 muffins

 

Ingredients:
1 cup pumpkin puree*
2 eggs
1/2 cup sugar
1 1/2 cup whole wheat flour
1 tsp baking powder
2 tsp pumpkin pie spice
1/2 tsp baking soda
1/2 tsp salt
1/2 cup mini chocolate chips, plus more for sprinkling on top (optional)

* Make sure to get pumpkin puree, not pumpkin pie mix. Pumpkin puree is purely pumpkin, whereas pumpkin puree has lots of sugar added.

Directions:
1. Preheat the oven to 350 degrees. Grease muffin tins with cooking spray.
2. In a large bowl, combine the pumpkin puree, eggs, and sugar until blended and smooth.
3. In a medium bowl, whisk the flour, baking powder, pumpkin pie spice, baking soda, and salt.
4. Add the flour mixture into the pumpkin mixture in batches, until combined. Do not over mix.
5. Fold in the chocolate chips.
6. Spoon in the batter in the muffin tin, filling about 2/3 full. Sprinkle a few more chocolate chips on top.
7. Bake for 25 minutes or until a toothpick inserted in the middle comes out clean. Let muffins cool for 5 minutes before removing from the tins.
