There are so many bars lined up on the grocery store shelves. It can get confusing. I like to highlight bars on my grocery store finds posts because many clients do ask me which ones I recommend. Before I recommend any bars, I always recommend real food first. I love this new line of KIND bars. The first ingredient always comes from a nutritionally-dense whole food – almonds or peanuts. I was so excited when KIND sent over these samples to try! Each bar contains 12 grams of protein each.

GT came out with a new flavor this winter – Pure Love. It contains blood orange, hibiscus, and rose. It has a definite floral taste. I was a little taken aback at first, but then the flavor grew on me. I love adding a new flavor to my kombucha rotation.

For quite a while acai was known as THE superfood. While all fruits and vegetables contain phytonutrients that have superfood elements, acai was touted for its high amounts of antioxidants that can help build up your immune system and protect your cells against damage from free radicals. Fresh acai berries are not regularly available in grocery stores. I found these frozen packs and have been adding them to my smoothies. It turns a deep dark purple shade.

The Good Bean: Crispy Favas + Peas

The Good Bean just came out with a new line with fava beans and peas. The original line with chickpeas is still growing with new flavors. I was excited when they reached out to me to see if I wanted to try their new line – of course, my answer was yes! One serving contains 7 grams of plant proteins and 3 grams of fiber. To make their crispy favas and green peas, they soak them raw, then quickly crisp them with a spritz of coconut oil to retain the crunch. They are vegan-friendly, gluten-free, non-GMO, high protein, high fiber, and low fat. I’m slightly obsessed with the balsamic herb flavor. I’ve been adding them on top of my salads for a crunch.

Others like, like Larabars, will always be seen in my pantry for a better-for-you grab and go snack. I like Larabars concept of “food made from food”. They believe that the foundation of a sound mind, body and spirit is derived from what you eat – and what you eat is most delicious and satisfying when it’s in a whole, natural state.
So when it comes to ingredients in their products, they include simple and recognizable ingredients and “anything else just gets in the way.”

If you are like me you have made your own homemade Larabars/energy bites before. I mean it’s only a few ingredients to whip up on a food processor. Seems simple, but if you have a tiny food processor that isn’t very powerful, it can be quite the messy production. Larabar makes it much simpler for ya!

The mint chocolate truffle flavor is simply dates, almonds, fair trade chocolate chips, cocoa powder, peppermint oil, and coconut flour. A label reading tip that many dietitian’s preach it to look for a shorter ingredient list with familiar ingredients. I’d say for a for an indulgent truffle taste, this is a pretty sweet snack. (no pun intended)

Pumpkin Peanut Butter Bites

It’s pumpkin everything this time of year. When I saw Wild Friends create a new seasonal pumpkin spice peanut butter, I was so excited! I am a big fan of wild friends nut butters.

I’m not going to lie, I’ve been eating it straight from the jar with a spoon. I made energy bites with wild friends vanilla espresso flavor, so I created another energy bite recipe using this new nut butter!

Pumpkin Peanut Butter Bites

Instructions

  1. Add oats, flax seed, dried cranberries and pumpkin seeds in a large bowl. Toss to combine.
  2. Put pumpkin spice peanut butter and maple syrup in a small bowl and microwave for 30 seconds or until softened.
  3. Combine the peanut butter mixture with the oat mixture until combine. The mixture will be thick. Shape into tablespoon-sized balls. Store in refrigerator.

Notes

Use certified gluten free oats to guarantee gluten free recipe.

July 2013 Theme: Have Snacks, Will Travel!

Sometimes, the food is the best part of the journey. Be it business travel or a road trip for pleasure, share your favorite travel snacks/mini meals. Do you pack a special treat for the road to eat in the car or at rest stops? Or do you have a tried & true snack that makes it safely through airport security? Share your healthy recipe for road trip nourishment.

This was a perfect theme for me because I am currently on vacation right now and I needed to pack snacks for my travel time yesterday. I always like to pack snacks with me when I am traveling. It ensures that I will have a healthy snack and plus saves money from buying snacks that are way over priced at the airport.

I love these bars because they are super filling and easy to carry in your bag.

Blueberry Quinoa Bars
Makes 8 servings

 

Ingredients:
1/2 cup whole wheat flour
1/2 tsp salt
1/4 tsp baking soda
1/4 tsp baking powder
1/3 cup unsweetened applesauce
2 tbsp brown sugar
2 tbsp maple syrup
2 egg whites
1 tsp vanilla extract
3/4 cup cooked quinoa
1/2 cup rolled oats
1/2 cup dried blueberries
1/2 cup pecans, chopped

Directions:
1. Preheat the oven to 375 degrees. Spray an 8×8 baking dish with cooking spray.
2. In a small bowl combine the flour, salt, baking soda and baking powder.
3. In a large bowl, mix together the applesauce, brown sugar, maple syrup, egg whites, and vanilla until combined.
4. Slowly add in the flour mixture until combined. Do not over mix.
5. Gently fold in the quinoa, oats, blueberries and pecans.
6. Pour into the prepared baking dish and bake for 12-14 minute, until golden brown.
7. Remove from oven and let cool. Cut into 8 even bars and wrap individually for a perfect traveling snack!

Sweet Potato Chips

Looking for a crunchy snack? Trying to sneak in more vegetables? Trying to eat healthier, but love chips? You’ve come to the right place!

Sweet Potato Chips

The key to making perfectly thin chips, is a mandoline. You can find them in pretty much any store that has a kitchen section. If you do not have one, just try and evenly thinly slice your sweet potatoes.

Once you slice your sweet potato, there are two ways you can make your chips. At this point you can decide if you want to flavor your chips. For these I just used a little salt, but you can add anything like garlic powder, paprika, etc.
First option: Use a dehydrator. (Steph if you are reading this, I still have yours!) Just place the slices evenly on the dehydrator racks and dehydrate at 145 degrees and let dehydrate for about 4-6 hours.
—-> Pros: Can’t burn the chips using this method.
—-> Cons: Requires patience!
Second option: Preheat your oven to 400F. Arrange the potato slices, in a single layer, on a baking sheet lined with parchment paper. Bake in the center of the oven for 10 minutes. After 10 minutes, the edges should start to crisp. Flip each chip over, and return to the oven for another 2-3 minutes or until crispy.
—-> Pros: Quick cook time
—-> Cons: Can burn easily if you don’t watch them closely.

I love this recipe, because you don’t use any oil, they are fat free, and a healthy way to eat chips!
