I’ve written about Kodiak Cakes before, but now they have these Minute Muffins. All you have to do is add water, microwave for a minute, and you have yourself a muffin. I like to pump mine up with whisking in an egg for an adding punch of protein and top with fruit.

I’ve made my own dessert hummus before, but guys this Delighted by Dessert Hummus is by far creamier than what I’ve ever made. I loved the sweet snickerdoodle flavor. I’ve been dunking strawberries in this dessert hummus on repeat for my evening snack lately.

Puroast Coffee

I was intrigued by Puroast Coffee. They sent me a sample of their low acidic coffee to try. I usually add a little splash of milk to my coffee in the morning, but this was the first time I could actually drink it completely black. It is very smooth and much less bitter. Puroast has 70 percent less acidity than any other coffee. My day doesn’t start without a cup of coffee.

Simple Mills, I don’t think you make a product I don’t like. I wish I could cook and bake everything from scratch, but let’s be real, I’m busy! I have no shame in my box mix game, especially when it’s packed with simple and wholesome ingredients. Simple and delicious!

This month, Recipe ReDux members were challenged to create new healthy takes on eating savory or dinner-inspired dishes for breakfast.
Growing up in an Italian family, bread was accompanied with dinner on the side with any dish. We did eat a lot of Italian dishes growing up, so fresh Italian bread was typically served with those dinners. The times we strayed away from our Italian roots, there was still bread on the table and often cornbread since that was one of my sister’s favorites.

I remember not thinking some of the dinners didn’t pair well with the sweet corn bread, so I took the opportunity with this challenge to change it up a little and create a savory corn muffin.

These savory corn muffins were great on their own. I also melted a little cheddar cheese on top. My mind instantly started thinking of recipes to pair these muffins with, like a hearty soup, chili, or sauteed collard greens. These would even be great cut up and turned into a savory corn bread stuffing.

Sun Dried Tomato Corn Muffins

Ingredients

Scale
  • 1 ¼ cup finely ground cornmeal
  • ½ cup white whole-wheat flour
  • 1 ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 tablespoon butter, melted
  • 1 egg
  • 1 teaspoon vanilla extract
  • ½ cup plain full fat (or 2%) Greek yogurt
  • 2 tablespoons honey
  • ¼ cup milk
  • 3/4 cup sun-dried tomatoes, chopped

Instructions

  1. Preheat oven to 350 degrees F. Spray eight wells of the muffin tin with cooking spray.
  2. In a medium bowl, whisk together cornmeal, flour, baking powder, baking soda, and salt.
  3. In a small bowl, whisk together melted butter, egg, vanilla extract, yogurt, honey, and milk.
  4. Stir wet ingredients into dry ingredients. Mix until just combined. Fold in sun-dried tomatoes.
  5. Scoop about 1/3 cup of batter into eight muffin wells.
  6. Bake for 13-15 minutes or until tops turn golden and center feels firm to the touch.

Double Chocolate Zucchini Muffins

What do you do when you have an over abundance of zucchini and don’t know what to do with it all? … Make muffins!! Double chocolate zucchini muffins that is.

Two of my biggest nutrition tips for making healthy choices regarding muffins:

1. Make them yourself from scratch

2. Keep the size in check

1. When you make your own muffins, you know exactly what is going in your recipe. Don’t like how much sugar the recipe calls for, simply trim the amount or use healthier swaps like pure maple syrup.
2. I always opt for the traditional size muffin tin when I am baking. Even though I am always trying to make my baked good recipes a little lighter, they aren’t a substitute for a whole meal.
For example, many grab breakfast on the go going to work in the morning. Maybe they pick up a coffee and a reduced fat blueberry muffin. One may think deciding on the reduced fat is a healthier choice, but let’s see how that measures out. Below is an example of a reduced fat blueberry muffin from a popular chain restaurant:

Just by looking at the nutrition facts, it looks like a cupcake in disguise. 410 calories!? 40 grams of sugar !? 26% of the daily value of sodium!? 10 grams of total fat!?

Scroll down a little and look at the ingredients from the muffins I made. Now scroll back up and look at the ingredients in that muffin? Have you even heard of half of those ingredients before? I’m thinking my muffins win!

Double Chocolate Zucchini Muffins

Ingredients

Scale
  • 1 cup oat flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1/4 tsp baking powder
  • 1/3 cup coconut oil (melted then cooled – make sure it’s not hot!)
  • 1/3 cup maple syrup
  • 4 egg whites
  • 1 tsp vanilla
  • 2 cups grated zucchini
  • 3/4 cup chocolate chips

Instructions

  1. Preheat the oven to 350 degrees. Line a 12-cup muffin tin with muffin liners or grease with cooking spray.
  2. In a bowl combine the oat flour, cocoa, salt, baking soda, and baking powder. Set aside.
  3. In another bowl, whisk together the coconut oil, maple syrup, eggs and vanilla.
  4. Slowly incorporate the dry ingredients into the wet ingredients.
  5. Using a few paper towels or a cloth wring out excess moisture from the zucchini. Fold in the zucchini and chocolate chips (save some to add on top) until just combined.
  6. Fill each muffin tin and sprinkle a few chocolate chips on top.
  7. Bake for 18-20 minutes. Let cool for at least 5 minutes before removing from the pan. Store in an airtight container.
