- 3 pitted dates
- 4 ounces dark chocolate
- 1/4 cup natural creamy peanut butter
- 1/2 tsp espresso powder
- 1/4 tsp salt
- 1 cup silken tofu
- [Topping]
- 1/2 cup vanilla yogurt
- 1 tsp creamy peanut butter
- 1 tsp shaved dark chocolate
Instructions
- Soak dates in water to soften. Set aside.
- Using a double boiler, melt chocolate over medium heat. Stir in peanut butter, espresso, and salt. Remove from heat and let slightly cool.
- In a blender combine the dates, chocolate, and tofu. Blend throughly until combined.
- Divide equally into 4 small bowls. Cover and refrigerate for at least 2 hours to set.
- As the mousse is chilling, stir together the yogurt and peanut butter.
- Evenly divide the mousse into 4 small bowls. Add a dollop of peanut butter yogurt. Garnish with shaved chocolate.
