Sheet pan meals are great fresh out of the oven, but also really great as leftovers. Cook once, eat twice! Repurpose as is, eat over a whole grain, or enjoy over greens for a robust salad.
In a large bowl, combine butternut squash and broccoli. Add 1-tablespoon olive oil, half the garlic, 1-teaspoon of thyme to the vegetables, and salt and pepper, to taste; toss to combine.
