Sesame, Carrot, & Cucumber Salad
This Sesame, Carrot, & Cucumber Salad is perfect for warmer weather and also a delicious change from a traditional salad.
What are English Cucumbers?
English cucumbers taste is less bitter than conventional cucumbers, are milder and almost have a hint of sweetness.
Ingredients
– English cucumbers – large carrots, peeled – tablespoon sesame oil – tablespoons rice vinegar – teaspoon sugar – teaspoons low-sodium soy sauce – salt and pepper, to taste – tablespoon toasted sesame seeds

Using a vegetable peeler, peel carrots and cucumbers into ribbons.

Combine the cucumbers and carrots in a bowl.

In a small bowl, whisk together the sesame oil, rice vinegar, sugar, and soy sauce.

Season with salt and pepper, to taste.

Toss the cucumbers and carrots with the dressing. Sprinkle with sesame seeds.
