– delicata squashes – olive oil – small onion – garlic cloves – mushrooms – lean ground turkey – diced tomatoes – Italian seasoning – fresh spinach – salt & pepper
Place delicata squash flesh side down on the baking sheet
Heat olive oil over medium-high heat in a large skillet
Add ground turkey and cook until no longer pink
Add diced tomatoes, Italian seasoning, and spinach
Remove delicata squash from the oven flipping the squash so flesh side is facing up
Place back in the oven for 10-15 minutes
Remove from oven and enjoy!
