Balsamic Kale and Vegetable Saute

This one pan Balsamic Kale and Vegetable Saute recipe can help get a side dish or dinner on the table in minutes.


– olive oil – red onion – red pepper – garlic – mushrooms – chickpeas – grape tomatoes – kale – balsamic vinegar – salt and pepper – parmesan cheese

Add olive oil in a large skillet over medium heat. Saute the onions and peppers for about 1 minutes. Add garlic and cook for an additional minute.

Add mushrooms and chickpeas. Cook until mushrooms are tender.

Add kale, tomatoes, and balsamic vinegar. Toss vegetables to combine.

Season with salt and pepper, as needed.

Remove vegetable saute from the pan and garnish with parmesan cheese (if using).
